How to Make a Vegan Dish That is Healthy AND Tastes Great!

Recently, one of my good friends hosted a Forks Over Knives viewing party and asked that we all bring a vegan dish to share.  It is common for one to struggle with “How do I make something vegan?”  It’s surprisingly easy to turn some of your favorite recipes into a vegan delight!  I tried making a twist on chili and it turned out pretty tasty.  I hope you enjoy it as well!  Check back for more tasty and healthy recipes to follow! 
Vegan Chili
 
TSP (textured soy protein – this is what gives the texture of ground beef) – To rehydrate, add 1 cup boiling water to 7/8 cup TSP, mix and allow to soak for 10 minutes
2 garlic cloves, minced
1/2 onion chopped – I prefer the vidalia, but if you like it more pungent, use red
1 chopped bell pepper
1 pint chopped cherry tomatoes
1 15oz can or box of cannelini beans
3 Tbsp chili powder
1 Tbsp cumin
1 tsp salt
1/4 tsp cayenne
1 cup vegetable stock
2 Tbsp tomato paste
 
In a large pot, heat a small amount of oil or vegetable stock.  Add onions, garlic and bell pepper and saute for about 3 minutes. Add the spices and cook for about 1 minute. Add the tomatoes, beans, TSP, stock, tomato paste and bring to a boil.  Reduce heat and simmer for approximately 20 minutes, stirring occasionally.
 
If you prefer a little more of a tomato sauce texture, just add one jar tomato sauce.  Pair this with brown rice or quinoa and enjoy!
 
Additional note: If you have a slow cooker, this is a great meal that can cook all afternoon on low so that you have an easy meal for dinner.  There are some tasty vegan cheddar cheese alternatives that also add a nice touch when sprinkled on top!
